Pineapple-Teriyaki Salmon

In a small sauce pan, wisk together first 5 ingredients and bring to boil. Reduce heat and continue to simmer until thick and syrupy. Let cool.

Pre-heat oven to 425 degrees. Line baking sheet with foil and lightly spray with cooking spray.
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tsp. orange zest
  • 6 oz. pineapple juice
  • 3/4 tsp. salt
  • 4 (6oz.) Salmon fillets
  • Black pepper
  • Cooking spray
  • Rinse and pat dry salmon.
  • Place on baking sheet spray salmon with cooking spray and season with salt and pepper.
  • Spoon or brush glaze over salmon.
  • Bake in pre-heated oven for approximately 10 minutes per inch thickness of fish or until fish flakes with fork.
  • Brush with additional glaze about half way through cooking time.
