Orange-Balsamic Glazed Salmon
  • 1/2 cup orange marmalade
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon crushed red pepper
  • 1 teaspoon reduced sodium soy sauce
  • 4 (6oz.) Salmon fillets
  • cooking spray or canola oil
  • salt and pepper
  • Pre-heat broiler.
  • Lightly grease baking sheet with cooking spray or canola oil.
  • Rinse and pat dry salmon filets
  • Spray fish fillets with cooking spray or brush with canola oil.
  • Season with salt and pepper.
  • Place fish 4-6 inches under pre-heated broiler and heat for 4 minutes.
  • Remove fish and spoon glaze over top of fish. Return to oven and continue boiling for another 4-6 minutes or until fish flakes with fork.
