Parmesan Encrusted Steelhead
 
Preparation:
Pre-heat oven to 400 degrees. Line baking sheet with foil and lightly spray with cooking spray. Season with salt and pepper.
Ingredients:
  • 4 Steelhead fillets
  • Combine all marinade ingredients in 1 quart bowl and blend well using wire whisk
  • Generously apply marinade to each side of the salmon filets and then place the salmon filets in plastic bag for 30-60 minutes to marinate
  • Heat non-stick skillet
  • Add wok oil to skillet and heat until fragrant
  • Add Salmon Filets rounded side down to skillet leaving at least 1� space between them
  • Cook 4-5 minutes until deep golden brown and turn. Cook 3-4 additional minutes
  • Salt and Pepper
Directions:
  • Combine Parmesan, chopped pecans, bread crumbs and lemon zest in medium bowl.
  • Drizzle melted butter and stir. Sprinkle topping on fish fillets.
  • Bake in pre-heated oven for approximately 10 minutes per inch thickness of fish or until fish flakes with fork.
