Bacon Wrapped Scallops with Creamy Horseradish Sauce
 
Blend all ingredient and allow flavors to marry for 60 minute before serving
Ingredients:
  • ¾ Cup Sour Cream
  • ¼ Cup Mayonnaise
  • ¼ Cup Prepared Horseradish
  • 1 Tablespoon dried Chives
  • 1 Teaspoon freshly squeezed Lemon Juice
  • ½ Teaspoon Salt
  • 12 – Ginormous Scallops
  • 6 Slices Pepper Bacon
  • 2 Tablespoons un-salted butter
  • Lemon Wedges for Service
  • Unsalted Butter
Directions:
  • Lay bacon out flat on a baking sheet and place another baking sheet on top of it to keep it flat
  • Bake at 350 degrees approximately 10 minutes, until fully cooked but not browned – all to cool till it can be handled
  • Dry each scallop off with paper towel to remove any excess moisture
  • Dredge each scallop in seasoned flour and remove any excess
  • Place a scallop at the end of a slice of bacon and roll till the bacon mak==completele encircles the bacon and overlaps it by ½ inch Insert a skewer into each scallop where the bacon is overlapped half way up the side of the scallop. Place skewered scallops into refrigerator for 30 minutes
  • Heat Butter in non-stick sauté pan – do not allow to brown
  • Place scallops in Heated pan and sear on both sides for 2 minutes
  • Remove from Heat and bake in 350 degree oven for 8-10 minutes until the scallop is fully cooked
